Chicken Curry

Chicken curry is a firm favourite of most and has an earthy, rich and unique flavour. Restaurant dishes are great but a traditional indian home cooked curry cannot be matched. Our family recipe has been honed to explode in flavour.

Serves: 4

Ingredients
  • Chicken (On the Bone) or breasts – 1kg
  • Oil (Sunflower or personal own) – 4 to 6 Tbsp
  • Butter – 1 to 2 tbsp
  • Finely chopped White onions – 2 to 3 large
  • Garlic – 1 Tbsp
  • Ginger – 1 Tbsp
  • Green Chilli – 1 Tbsp
  • Sashi’s Chicken Masala – 1 Heaped Tbsp (Add more to taste if desired) or Sashi’s Garam Masala – 1 Heaped Tbsp
  • Salt – 1 Tsp (or as per your taste)
  • Turmeric – ½ Tsp
  • Red Chilli Powder – 1 Tsp
  • Passata Sauce (250g/½ box) or Chopped tomato tin – 1
  • Small bunch fresh Coriander finely chopped
Cooking Method
  1. Turn hob onto a low-medium heat and add the oil into a large pan. Add the finely chopped onions and cook for 15-20 minutes, stirring regular until the onions turn golden brown and soft
  2. Now add the butter, garlic, ginger, green chillies and stir into the pan for 1-2 minutes. Next add the red chilli powder, turmeric, salt and Sashi’s Chicken Masala, constantly stir the mixture for a further 1-2 minutes
  3. Then add the chopped tomatoes/passata into the pan and mix well for 3-4 minutes or until the oil rises on the top
  4. Now add the Chicken and mix well. Close lid and cook on a low to medium heat for a further 10 minutes (chicken should have released some water)
  5. Finally add 300ml-450ml of hot water, dependent on the thickness desired for your sauce. (Less water for a thicker sauce). Mix well and replace lid and cook on a medium heat for 25 minutes or until chicken is fully cooked through. You can add more water if desired
  6. (Optional) Before serving add a further ½ tablespoon of Sashi’s Chicken Masala or Sashi’s Garam Masala sprinkled over the top of the pan and add fresh chopped coriander
Points to Remember
  • Serve with rice and Chapatis/Naan bread
  • Adjust level of Sashi’s Masala according to taste & Add some to the end of cooking time
